Mark Davis

Mark Davis began his culinary career at age 15, working his way up from dishwasher to Assistant Chef at various restaurants in the San Francisco East Bay area. Following his love of adventure, the mountains and skiing, Mark traveled for a summer in Europe and then settled in Lake Tahoe where he worked for the Sahara Tahoe, Caesar’s Tahoe and Harvey’s Resort Casino as Line Supervisor, Banquet Chef and Chef Saucier. Realizing the need for a credential, Chef Mark began a three year ACF apprenticeship training program at the MGM Hotel in Reno NV. After graduation Mark traveled to Naples FL where he worked as Café Chef, Grill Chef, Saucier Chef and Chef Garde Manger for the prestigious five star, five diamond Ritz-Carlton Hotel. Four years later finds Chef Mark Davis opening the Ritz-Carlton in Marina del Rey as Chef Garde Manger.
Mark then made a shift to the education arena when he took a position as Garde Manger Chef Instructor at the prestigious California Culinary Academy. In his over 16 years with that company Chef Davis was promoted to the position of Department Head and ultimately Executive Chef.
Chef Mark Davis is also a competitive Ice Sculptor recognized around the world for his innovation, style, and skill in carving, design and sculpture. Chef has competed in both the Nagano and Utah Winter Olympics as part of the United States Ice Carving Team! Mark has traveled the world competing in International Ice Carving Competitions in Canada, China, Germany, Japan and many within the United States. At one time, Mark was invited to join Malaysia snow sculpture team to compete in the world snow sculpture competition in Harbin, China.
Mark has produced over 500,000 pounds of the most amazing ice sculptures in the world. With over 25 years experience, he is exceptional at creating any size and shapes imaginable- some sculptures have towered 22 feet tall and were carved out of 10 – 4200 pound blocks of crystal clear ice! Chef has produced ice displays for Bill Graham Presents, Food Network “Chefs vs City”, San Francisco Museum of Modern Art, The Oakland Zoo, Disney on Ice, The Reno/Tahoe Convention and Visitors Bureau, The Mayor of San Francisco, Redwood
City Hometown Holidays Event, The Brentwood Corn Festival, The Renaissance Faire, and that’s not it!
Chef Davis is also a recognized Snow, Sand, Tallow and Vegetable sculptor! Chef Davis is a multi- silver medalist winning competitor. He has competed in the World Ice Art Championships, Fairbanks, AK, 1998 and 2002 Winter Olympics, Nagano, Japan and Salt Lake City, Utah, Winterlude in Ottawa, Canada and the Harbin Ice Lantern Festival in Harbin, China.
Currently, chef holds the title of Academic Director at the Art Institute of San Francisco, California; a young, widely recognized, fresh and expanding culinary school.
Chef Davis is responsible for student persistence, academic integrity, and curriculum delivery, a fine dining restaurant staffed by students, not to mention the growth of the program enrollments, graduate success and regional notoriety!
