Michael Regua

Chef Michael Regua has been with the historic Antoine’s Restaurant for over 30 years—the restaurant itself is considered America’s oldest, dating back to 1840. Every member of Michael’s family loved to cook. His own interest began as a young boy watching his mother cook in the kitchen. He also learned from his grandfather who worked as a cook at the Martin Brothers Restaurant in New Orleans. His Experiences prior to coming to Antoine’s include work with Holiday Inns, Bienville House, and the Monteleone Hotel. In 1972, he began honing his cooking skills even further after his cousin brought him onboard at Antoine’s. Starting out as a prep cook, he worked his way up the ladder to Executive Chef, taking over from Chef John De Villes. In his years with Antoine’s Michael has prepared meals for presidents, heads of state, and celebrities. Some of the more recent dignitaries have included Presidents Jimmy Carter and George W. Bush, Nicolas Cage, Linda Carter, Whoopie Goldberg, Kevin Costner, Joan Rivers…the list goes on. When Pope John Paul II visited New Orleans in 1987, Chef Michael was chosen as one of the local chefs to prepare a meal for him. Under Executive Chef Michael Regua, Antoine’s has received a number of awards, including the Lafcadio Hearn Award, presented through the Chef John Flose Culinary Institute Hall of Honor. Throughout his career with Antoine’s Chef Michael has continued the quality and traditions that have made this historic restaurant famous.
