Marcos Flores

Marcos Flores joins Richard Sandoval Restaurants to serve as executive chef of Chicago-based Latinicity that opened in November 2015. Originally from Caracas, Venezuela, Flores specializes in bringing cross-culture flavors together and is known for maximizing teamwork within the kitchen. Flores initially discovered his passion for culinary arts when launching his career with high-end catering service, Club Caterers, in Miami. After leaving Club Caterers, Flores stayed within the Miami area and worked as a line cook for numerous institutions such as Diegos Restaurant, British Airways and Café Cardozo.
It was then that he joined the Westin team as a line cook in 2003 and moved his way through the ranks, becoming the supervisor in 2006, later the sous chef for Rivals and finally became the chef de cuisine for Rivals (generating $1.6 million in annual food sales). After he left Rivals, he became chef de cuisine for Café Restaurant and Hollywood Prime. After managing these restaurants, he was promoted to banquet chef at the Diplomat and finally, he became the consulting chef for the W Doha Hotel & Residence in Qatar, where he developed menus of international Latin cuisine and where he remained before relocating to Chicago in 2015.
During his time with the Starwood Hotels group, Flores was a three-time winner of the ‘Best in Class’ award, and he has also been featured as a demonstration chef with Macy’s and participated as a chef with the Beer Fest Gulf Stream. Flores is most excited about Chicago’s burgeoning food scene and its overall youthful spirit. In his spare time, Flores enjoys spending time with his three year old son Xander, visiting the beach, developing his exotic freshwater fish collection and playing watersports.
